Are you gluten sensitive or just want to cut out bread? Here is a great alternative to regular toast that is about half the calories, half the carbs, and 0% fat. It is simple to make, and you have unlimited options to be creative with the toppings. A playful way to make breakfast with the kids (actually, it’s fun for adults too)! 

Nutritionally speaking, sweet potatoes are packed with beta-carotene! Beta-carotene is a precursor to vitamin A. This means that the body converts foods that have beta-carotene into vitamin A, which our body needs for healthy skin, strong hair, and to improve vision and boost our immune system. Another tasty way to get your vitamins to help you fight off colds this winter

Ingredients for sweet potato toast: 

  • 2 sweet potatoes (sliced into ¼ inch slices)  

*Try to get shapely rounded potatoes to get even slices* 

Items needed: 

  • Chef’s knife 
  • Mandolin slicer (if you have one) 
  • Cookie sheet 


  1. Pre-heat oven to 350 degrees. 
  2. Rinse, peel, and slice sweet potatoes into ¼ inch slices using chef’s knife or mandolin slicer. 
  3. Place sliced potatoes on cookie sheet on middle rack and bake for 15 – 25 minutes until soft but not cooked fully through. 
  4. Remove potato slices from oven and completely cool on counter. (If potatoes are not completely cool before you put them in the fridge they will sweat and get soggy.) 
  5. Transfer slices to a lidded container and put in fridge.  
  6. When ready to eat, put sweet potato slices in your toaster on high until crispy and bubbly. Add your favorite toppings that you normally add to toast. 

Here are a few suggestions: 

  • Mashed avocado topped with sliced tomato, red onion, and Himalayan salt  
  • Sunflower butter topped with raspberries, blackberries, and a sprinkle of cinnamon  
  • Raw honey, banana, strawberries, and cocoa powder
