Summer is full of family picnics, barbeques, pool parties, and trips to the beach. I am always in search of a quick-and-easy, tasty, healthy option to bring along. Paired with fresh summer veggies, this dip does just the trick. Sundried tomatoes add to the flavor while extra tahini makes it super creamy. Bring this hummus to your next party and your friends will adore you!

Time: 10-15 minutes
Servings: 32 (2 Tbsp each)

 

INGREDIENTS

  • (2) 15.5-ounce cans white beans (cannellini or great northern)
  • ½ cup sundried tomatoes (preferably not in oil)
  • ½ cup tahini
  • ⅓ cup olive oil, plus extra for drizzle
  • ¼ to ⅓ cup lemon juice (2 lemons)
  • 6 garlic cloves (2 Tbsp minced)
  • 1 tsp sea salt
  • smoked paprika

If you are unable to source organic, we definitely recommend non-GMO. GMO foods are likely treated with herbicides, especially glyphosate, because they are engineered to resist it. DIRECTIONS

  • Add all ingredients (except the paprika and extra olive oil) to food processor and mix until smooth.
  • If you prefer a thinner texture, add ¼ cup water and pulse again to incorporate.
  • Transfer to a serving bowl, drizzle with olive oil, and sprinkle smoked paprika on top.
  • Serve with your favorite fresh veggies!
