This time of year fresh berries come into season around the country. The natural sweetness of seasonal berries makes it easier to not add a sweetener in many recipes. Together strawberries and chia seeds create a nice jam like texture, no heating needed!

Time: 5 minutes, plus chilling time

INGREDIENTS

  • 1 pint (~3 cups) fresh strawberries
  • 3 Tablespoons chia seeds

Optional: If you prefer a sweeter jam, add 5-10 drops liquid stevia or 1-2 Tbsp local honey

DIRECTIONS

  1. Blend strawberries in high-speed blender. Taste and add sweetener if preferred.
  2. Add chia seeds. Pulse to mix in.
  3. Store for 1-2 hours or overnight in the fridge for the chia seeds to gelatinize. Since this jam is low in sugar, it keeps in fridge for up to 1 week. Pour extra jam in an ice tray for smaller portions and keep in the freezer for longer. Enjoy mixed into morning oats, yogurt, or on your favorite breakfast treat!
