Looking for a tasty low glycemic treat? This simple seeded chocolate bark is your answer. Choose an unsweetened dark chocolate, 70% or higher, to obtain the most plant flavanols. Plant flavanols may relax blood vessels and improve blood flow to protect the heart. Combine with a three-seed powerhouse: pumpkin, chia, and flax. Pumpkin seeds give the bark a crunchy base while also providing fiber, iron, and magnesium.

Powerhouse Snack

Time: 15 minutes, plus chilling time
Servings: 64 pieces 

  • 2 cups pumpkin seeds 
  • ½ cup chia seeds 
  • ½ cup flax seeds 
  • ¼ tsp sea salt 
  • Pinch of cayenne 
  • 3.5oz (100g) 85% unsweetened dark chocolate 
  • 2 Tbsp coconut oil 
  • 2 Tbsp maple syrup 
  • ¼ tsp sea salt 
  1. Line a baking sheet with parchment paper. 
  2. In a large bowl, mix together all the seeds, sea salt, and cayenne. 
  3. Over low heat, combine the dark chocolate, coconut oil, and maple syrup in a small saucepan. Continue stirring so as to not burn the chocolate. Once melted and combined, pour the chocolate over the seeds and fold to coat the seeds. 
  4. Spread the chocolate seeded mixture across the parchment covered baking sheet.  
  5. Refrigerate for 1 hour or freeze for 20 mins to set. Break the bark into 1 to 2-inch pieces. Keeps best stored in a jar or container in the fridge.
