As summer begins its slow march towards fall, pears come into season. And I’m always finding new ways to enjoy seasonal fruits, so now is the moment to start playing around with all of the flavorful and healthful possibilities provided by pears. Pears have more moisture than apples, therefore no extra liquid is needed in this recipe. Using almonds, oats, and flax meal as the base, these muffins are dense, nutty, and delicious. Low in sugar while high in fiber and healthy plant fats, they can be enjoyed without any guilt.

Servings: 12 muffins 

 

INGREDIENTS

DRY 

  • 1 cup almonds  
  • 1 cup GF oats 
  • ¼ cup potato starch 
  • ¼ cup flaxseed meal 
  • 2 tsp baking powder 
  • ½ tsp salt 
  • 2 tsp cinnamon 

WET 

  • 2 cups pear, sliced (2 ripe pears)  
  • ¼ cup almond butter  
  • 1 Tbsp fresh ginger, minced 
  • 1 Tbsp vanilla 

FOLD IN (optional) 

  • ¼ cup mini chocolate chips 

TOPPING  

  • Unsweetened shredded coconut

If you are unable to source organic, we definitely recommend non-GMO. GMO foods are likely treated with herbicides, especially glyphosate, because they are engineered to resist it. DIRECTIONS 

  1. Preheat your oven to 350 F. Line muffin tins or spray with coconut oil to prevent sticking.
  2. In food processor, grind the almonds. Set aside.Next grind the oats.
  3. Add the ground almonds, oats, and remaining dry ingredients to the food processor. Pulse to mix and avoid clumps. Place in a large bowl. 
  4. Now combine all wet ingredients in the food processor and mix until an even consistency throughout.
  5. Pour the wet mixture into the dry mix and gently stir. Option to fold in the mini chocolate chips. 
  6. Then spoon the batter into 12 muffin tins. Sprinkle with coconut. 
  7. Bake for 20 minutes or until a toothpick comes out clean.
  8. Allow to cool on cooling rack for 15 minutes before removing from tins. Enjoy best eaten within 3 days.
